Roasted Organic Beet Salad
Ingredients:
1 lb. organic red beets
¼ cup olive oil
¼ lb goat cheese
1 teaspoon fresh thyme
1 teaspoon fresh chives
1 teaspoon fresh parsley
½ cup micro herbs or salad greens
1 Tablespoon honey
1 Tablespoon white truffle oil
1 Tablespoon white balsamic vinegar
salt and pepper, to taste 1. Coat whole beets in olive oil. Roast whole in 400 degree oven for 1 hour or until soft. Cool
2. After beets are cool, peel all the skin. Slice about ¼ in. thick across.
3. Using a ring mold or cookie cutter, cut circle out of the beets approximately 3 inches in diameter. Small dice the excess.
4. Combine chopped fresh herbs, goat cheese, and salt and pepper.
5. Combine honey, truffle oil and vinegar. Season with salt and pepper.
6. Plate by placing alternate layers of beets and goat cheese. Toss micro herbs or salad greens in vinaigrette. Place on top of beets. Sprinkle diced beets around plate.
